Chili Eggs Breakfast (Print Version)

# Ingredients:

01 - 4 slices of bacon, center cut.
02 - 1 poblano or bell pepper, chopped finely.
03 - 1 white onion, diced into small pieces.
04 - 2 garlic cloves, grated or minced.
05 - 1 pound of raw turkey breakfast sausage.
06 - 1 packet of chili spices.
07 - A 28 oz can of crushed fire-roasted tomatoes.
08 - 3 to 4 cups beef broth, depending on how thick you like it.

# Instructions:

01 - Heat a Dutch oven or large pot over medium and toss in the bacon. Once it's crispy, take it out and lay it on some paper towels.
02 - Using the leftover bacon grease, stir in the onion and pepper. Let them soften for about 2-3 minutes, then add garlic. After 30-60 seconds, toss in the turkey sausage.
03 - Break apart the sausage as it cooks and make sure it's fully browned all the way through.
04 - Add everything that's left into the pot. Chop the cooked bacon and toss that in, too. Let it come up to a boil, then turn it down and cover. Let it gently simmer for 45 minutes to an hour before enjoying.

# Notes:

01 - Serve with fried eggs, hash browns, or bake it with eggs on top.
02 - Put on extras like avocado, salsa, cheese, sour cream or yogurt, or tortilla chips.
03 - Swap in ground chicken or cooked sausage crumbles if that's what you have.
