# Ingredients:

→ For the Patties

01 - 1/2 cup spinach, chopped finely (use fresh or thawed frozen spinach with excess water squeezed out)
02 - 1 lb ground chicken (dark meat works best for a juicy texture)
03 - 1 egg (helps hold the patties together)
04 - 1/4 cup breadcrumbs (optional but adds structure)
05 - 1/4 cup white cheddar cheese, shredded (save extra if you'd like to add on top)
06 - Salt and pepper, to season
07 - 1/4 tsp oregano (dried)
08 - 1/4 tsp onion powder
09 - 2 garlic cloves, minced
10 - 1 tbsp olive oil (to cook the patties)

→ For the Toppings

11 - Lettuce, tomatoes, or whatever toppings you enjoy
12 - Burger buns (use gluten-free or whole wheat if you'd like)
13 - Optional: Add a drizzle of mustard, aioli, or both!

# Instructions:

01 - Grab a large bowl and combine your ground chicken, shredded cheddar, spinach, breadcrumbs, egg, garlic, oregano, onion powder, salt, and pepper. Gently mix by hand (or with a spoon) until everything is just blended. Don't overmix so your patties stay tender!
02 - Split the chicken mix into four equal portions. Lightly form each one into a round and flatten to about 1/2 inch thick. Press your thumb into the center of each patty to make a little dip; this keeps them flat when they're cooking.
03 - Warm up a skillet or grill pan over medium heat, then pour in the olive oil. Add the patties and cook for 5-6 minutes on each side until nicely browned and 165°F inside. If you're adding cheddar on top, pop a slice on during the last few minutes and cover the pan to melt the cheese.
04 - Toast the insides of the buns in your skillet or oven if you want them crispy. Add a patty to each bun, stack on your favorite toppings (like tomatoes, lettuce, or pickles), and finish it with your go-to condiments. Eat right away!

# Notes:

01 - If you’re using frozen spinach instead of fresh, remove all the extra water so your patties don't turn out soggy.
02 - Sharp, melty white cheddar is a solid pick, but try mozzarella or pepper jack if you’re feeling adventurous!
03 - Breadcrumbs are optional, but they help hold the patties together. Swap them out for ground oats or gluten-free crumbs if needed.
04 - These patties are grill-friendly! Just oil the grates lightly, and skip pressing on the patties as they cook.
