Chicken Rice Green Sauce (Print Version)

# Ingredients:

→ Chicken & Marinade

01 - 1 tablespoon cumin powder
02 - 1/2 teaspoon black pepper, freshly ground
03 - 2-3 minced garlic cloves
04 - 1.5-2 pounds chicken thighs or breasts
05 - 2 tablespoons white vinegar or lime juice
06 - 1 teaspoon smoked paprika
07 - 2 tablespoons any cooking oil
08 - 1 teaspoon kosher salt

→ Green Sauce

09 - 2 chopped jalapeños
10 - 1/2 cup of mayo
11 - 1 tablespoon olive oil
12 - 1/4 cup sour cream
13 - A whole cup of cilantro leaves
14 - 2 garlic cloves
15 - 1 tablespoon lemon or lime juice, freshly squeezed

→ Yellow Rice

16 - 2 cups chicken broth or stock
17 - 1 cup frozen green peas
18 - 1 tablespoon butter or any oil
19 - 1/4 teaspoon black pepper
20 - 1/4 teaspoon onion powder
21 - 1 teaspoon turmeric powder
22 - 1/4 teaspoon cumin
23 - A pinch of salt
24 - 1/4 cup finely chopped onion
25 - 2-3 garlic cloves, minced
26 - 1 cup jasmine rice

# Instructions:

01 - Mix up all the marinade ingredients in a bowl. Keep 1/4 of it for brushing later. Coat the chicken with the rest. Let it sit in the fridge for an hour or overnight.
02 - Get the grill preheated to medium-high or heat your oven to 450ºF. If you're serving rice, get that started now.
03 - Grill each side of the chicken for 5-7 minutes, or bake it for nearly 30 minutes until the inside hits 165ºF. Brush some of the marinade you set aside about halfway through cooking.
04 - Rinse the rice and let it soak for 10-15 minutes. In a pot, melt butter and sauté garlic and onion. Mix in the rice, spices, and seasonings. Pour the broth, bring it to a boil, then lower the heat, cover, and simmer for 15 minutes. Add peas and let it sit for a bit.
05 - Put all the sauce ingredients in a blender and blend until smooth and creamy. Add a pinch of salt and pepper to your taste.
06 - Put the rice on your plate, add the chicken over the top, then spoon on the green sauce.

01 - Feel free to use chicken breasts, thighs, drumsticks, or even a whole chicken
02 - Marination time can go from just 1 hour to leaving it overnight
