Chicken Kofta Garlic Yogurt (Print Version)

# Ingredients:

01 - 1 medium onion, chopped finely
02 - 3 minced garlic cloves
03 - 1/4 cup parsley, chopped fresh
04 - 500 grams of ground chicken
05 - 1 teaspoon coriander powder
06 - 1 teaspoon cumin powder
07 - 1/2 teaspoon black pepper (or as you like)
08 - 1 teaspoon salt, more or less to taste
09 - 2 tablespoons of olive oil for grilling
10 - 2 tablespoons of lemon juice
11 - 1 cup plain yogurt

# Instructions:

01 - Mix the cumin, coriander, black pepper, and salt together with the ground chicken.
02 - Add in the onion, garlic, and parsley, then combine everything in a big bowl.
03 - With wet hands, shape the mixture into long oval-shaped koftas.
04 - Heat your grill or grill pan on medium to high heat and lightly oil it to keep the koftas from sticking.
05 - Cook each side of the koftas for about 5-7 minutes. They should be golden and fully cooked.
06 - Combine yogurt, a sprinkle of salt, and a bit of lemon juice in a small bowl for a quick sauce.
07 - Serve your koftas with the yogurt sauce and any sides you love.

# Notes:

01 - After grilling, let the koftas sit for a few minutes so the flavors come together.
02 - Make sure the inside reaches 75°C (165°F) for safe eating.
03 - You can tweak the spices based on what you like best.
