Take a big bowl and combine the cherries, syrup, lemon juice, and vanilla. If you're using arrowroot or cornstarch, sprinkle it in now and mix until everything is coated. Pour this mixture straight into a 9x9-inch pan or a 10.25-inch cast iron skillet.

In a separate mixing bowl, toss the oats, almonds, flour, and salt together. Add in the coconut oil, syrup, and almond extract, then stir it all up until well blended.

Spread the topping evenly across the cherries in your dish. Cover most of the cherry filling with the topping.

Place the dish in the oven and cook for about 55 to 60 minutes, or until the top looks golden and crispy. If you want it extra crisp, broil it for a few minutes at the end.
