Cheesy Texas Party Dip (Print Version)

# Ingredients:

01 - 2 cups (16 oz) Velveeta cheese, chopped into cubes
02 - ½ cup grated pepper jack cheese
03 - ¼ cup fresh cilantro, minced
04 - 1 can Rotel (14.5 oz), don’t drain
05 - ½ pound spicy or mild pork sausage, casing discarded
06 - 1 cup black beans, rinsed well and drained
07 - ¾ cup of your favorite beer or a Pale Ale variety
08 - Season to taste with kosher salt and freshly ground black pepper

# Instructions:

01 - In a medium pan over medium heat, crumble the sausage as it browns. Sprinkle with salt and pepper.
02 - Add beer into the skillet and let it cook down for about 3-4 minutes.
03 - Toss in the Velveeta cubes and grated pepper jack. Stir gently until smooth and melty, which takes around 3-5 minutes.
04 - Mix in the Rotel tomatoes, black beans, and cilantro. Stir until it's all blended together.
05 - Serve hot alongside some chips for dipping fun.
