Cook the minced beef in a skillet on medium heat until it’s no longer pink. Drain off any fat, then mix in taco seasoning and a splash of water (about 1/4 cup). Stir and cook for 1-2 minutes, letting the liquid disappear.

Grab a mixing bowl and toss in the seasoned beef, cream cheese, and sour cream. Use a fork to mash and combine everything well. Taste and add a pinch of salt if you like.

Spread the beef mixture evenly over both tortillas, making sure to go all the way to the edges. Scatter shredded cheddar cheese on top of the filling.

Roll up the tortillas tightly, trim the ends, and use a sharp knife to slice each roll into five even pinwheels.

Place the pinwheels in a single layer in your air fryer basket. Use parchment paper if you’re worried about sticking. Cook at 190°C for 5 minutes.
