Cheesy Jalapeno Bacon Toast (Print Version)

01 - 4 thick bakery-style white bread slices
02 - 2 pieces of Monterey Jack cheese
03 - 2 pieces of cheddar cheese
04 - 4 cooked slices of thick, smoked bacon
05 - 4 tablespoons of cream cheese
06 - 4 big jalapenos
07 - 2 tablespoons of butter
08 - 2 tablespoons of cilantro, chopped small (optional)

# Instructions:

01 - Put on gloves and slice the jalapenos down the middle. Scoop out the seeds and insides. Fill each piece with cream cheese and lay them on a baking sheet. Heat in the oven at 375°F (190°C) for about 15-20 minutes until the jalapenos soften a bit, and the cream cheese looks bubbly and slightly brown.
02 - Spread out the bread. On two pieces, place cheddar cheese. On the other two, add Monterey Jack cheese. Chop the baked jalapenos into smaller pieces, and share them between the slices with cheddar. Put the bacon slices on the Monterey Jack ones. Top with cilantro if you'd like. Close the sandwiches, matching one cheddar side with one Jack side.
03 - Coat the outsides of the sandwiches with butter. Place them butter-side down in a skillet over medium-low heat. Spread a little more butter on top. Toast both sides for about 3-4 minutes until the bread is golden and the cheese melts together.

01 - Always wear gloves when handling jalapenos to keep your hands from getting irritated. Wash them well afterward!
02 - Pick a good-quality, nitrate-free smoked bacon to boost flavor.
03 - If you like your jalapenos a little crunchier, knock 10 minutes off their baking time.
04 - Choose sturdy bread like bakery-style white, Italian, or something artisanal to hold everything together.
