Cheesecake Strawberry Quesadilla (Print Version)

# Ingredients:

→ Filling

01 - ½ teaspoon vanilla essence
02 - 2 tablespoons granulated sugar
03 - ½ cup small strawberry pieces
04 - ½ cup softened cream cheese

→ Quesadillas

05 - 4 tortillas (6 inches each)
06 - ½ teaspoon cinnamon powder
07 - 2 tablespoons softened butter
08 - 1 teaspoon white sugar

→ Optional

09 - Dip with some strawberry sauce if you'd like

# Instructions:

01 - In a bowl, blend cream cheese, sugar, and vanilla until creamy. Toss in the strawberry pieces carefully so they don't mush up.
02 - Grab a tortilla and spread half the cream cheese mix on it. Heat 1 teaspoon of butter in a pan on medium. Lay the tortilla in the pan, spread side facing up.
03 - Spread butter on another tortilla. Place this one butter-side up on the tortilla in the pan. Cook each side for about 2-3 mins until golden.
04 - Combine the cinnamon and sugar in a small dish. Sprinkle this mix over the cooked quesadilla for flavor.
05 - Repeat for the second tortilla or cook them both at once on a griddle. Cool for a couple of minutes, then slice and enjoy with strawberry sauce if you want.

# Notes:

01 - Wrap each quesadilla separately in cling wrap or foil to store. Keep in the fridge for up to 3-4 days or freeze for 2-3 months. Thaw in the fridge and serve cold if you prefer.
