Turn the oven to 325°F (165°C) and cover cookie trays with parchment.

Stir the salt, flour, and baking soda in one bowl. In another, blend the melted butter with the brown and white sugars. Mix in the egg, yolk, and vanilla, then add the dry mix bit by bit. Toss in the chocolate chips to finish.

Blend the soft cream cheese with the sugar and vanilla until it’s silky smooth.

Roll dough into balls, push in a hole, add the cheesecake filling, and cover the spot with more dough.

Bake for 15 to 18 minutes. Let them cool on the tray for 5 minutes, then move to a rack to finish cooling.
