Shrimp Penne Spinach (Print Version)

# Ingredients:

01 - 3 cups spinach, chopped roughly
02 - 1 cup shredded mozzarella
03 - 12 oz (340g) penne
04 - 1 cup grated Parmesan
05 - 1 lb (450g) shrimp, deveined and peeled
06 - 1 cup heavy cream
07 - 1/2 cup chicken broth
08 - 1/4 teaspoon optional red pepper flakes
09 - 3 cloves garlic, finely chopped
10 - Salt and pepper to your taste
11 - Chopped parsley for topping
12 - 2 tablespoons olive oil

# Instructions:

01 - Fill a large pot with water and cook the pasta until it's tender but still has a bit of bite. Once done, drain the water and leave it aside.
02 - Warm up the olive oil over medium heat in a big skillet. Lay the shrimp in and let them cook for around 2 to 3 minutes per side, or until they're pink all over. Take them out and save for later.
03 - Use the same skillet to cook the minced garlic for a minute or so until it smells great. Toss in the spinach and stir it for about 2-3 minutes until it wilts.
04 - Pour the chicken broth and heavy cream into the skillet. Turn the heat down to low and let it simmer. Mix in the mozzarella and Parmesan bit by bit, stirring until it all melts together. Sprinkle in salt, pepper, and red pepper flakes if you want some heat.
05 - Put the cooked pasta and shrimp back into the sauce. Stir it all up so everything is coated evenly with the cheesy sauce.
06 - Scatter some parsley on top before serving. It's best when eaten immediately!
