Carrot Apple Combo (Print Version)

# Ingredients:

01 - 1 granny smith apple, cut into thin sticks
02 - 1 red delicious apple, cut into thin sticks
03 - 2 large handfuls of shredded carrots
04 - 2 tablespoons fresh lemon juice
05 - 1/4 cup finely chopped yellow onion
06 - 1/3 cup dried cranberries, sweetened
07 - 1/2 cup plain vanilla yogurt
08 - 1/4 cup mayo
09 - 1 tablespoon granulated sugar
10 - 1/4 teaspoon ground black pepper
11 - 1/4 teaspoon table salt
12 - 1 cup mandarin orange slices, well-drained

# Instructions:

01 - Slice the apples into thin sticks and toss them in a bowl.
02 - Drizzle lemon juice over the apple pieces, mixing until coated evenly.
03 - Leave the apples to absorb the lemon juice for 5 minutes to keep them fresh.
04 - In a large mixing bowl, add the shredded carrots, chopped onion, and dried cranberries.
05 - After the apples have sat for 5 minutes, toss them into the mixing bowl.
06 - Add mayo, yogurt, sugar, salt, and pepper to the mix. Stir everything together until well combined.
07 - Gently fold in the drained mandarin segments so they don’t break apart.
08 - Cover the bowl and pop it in the fridge for at least three hours.
09 - Dish out the salad and dig in!
