Cajun Chicken Delight (Print Version)

# Ingredients:

→ Cajun Chicken on the Grill

01 - 4 chicken breasts, boneless and without skin
02 - 1 tablespoon lemon juice, freshly squeezed
03 - 1/4 teaspoon cayenne for a bit of heat
04 - 1 teaspoon smoked paprika for flavor
05 - 1/2 teaspoon garlic powder
06 - 1 tablespoon Cajun spice mix
07 - 1/2 teaspoon onion powder
08 - Salt and black pepper as needed
09 - 2 tablespoons olive oil

→ Creamy Alabama Dressing

10 - 1 cup mayo
11 - A pinch of salt and pepper, adjust to your taste
12 - 1 tablespoon Dijon style mustard
13 - 1/2 teaspoon each of onion and garlic powder
14 - 1 tablespoon lemon juice, squeezed fresh
15 - 2 tablespoons apple cider vinegar
16 - Chop 1 tablespoon parsley, optional garnish
17 - 1/4 teaspoon cayenne seasoning

# Instructions:

01 - Warm the grill to a medium-hot (about 200°C). Mix together the Cajun spices, smoked paprika, garlic and onion powder, cayenne, a little salt, and pepper in a bowl. Brush the chicken with olive oil, then cover them in your spice blend. Squeeze some lemon juice on top and let it sit for 10 to 15 minutes.
02 - Pop the chicken onto the hot grill. Leave them for about 6 to 7 minutes per side, and check if they’ve hit an internal temp of 75°C. Then let the chicken relax for a couple of minutes off the heat.
03 - As the chicken cooks, grab another bowl and stir together the mayo, apple cider vinegar, Dijon mustard, garlic powder, onion powder, cayenne, lemon juice, and a pinch of salt and pepper. Blend until smooth. Put it in the fridge for 15-20 minutes if you'd like the flavors to fuse.
04 - Plate the chicken and pour on lots of the Alabama sauce. For some flair, sprinkle chopped parsley over the top, if you like.
