California Burrito (Print Version)

# Ingredients:

→ Base

01 - 1 pineapple, peeled and cut into slices (optional)
02 - 8-10 large tortillas
03 - 1 recipe for grilled carne asada
04 - 1 recipe for crispy street fries
05 - 1 cup shredded cheese (use a blend like Mexican or cheddar/pepper jack)
06 - 1 jar or homemade roasted salsa

→ Avocado Crema

07 - 2 ripe avocados
08 - 1/4 cup of mayo
09 - 1 teaspoon lime juice
10 - 1 cup sour cream
11 - 1/2 teaspoon garlic powder
12 - 1/2 teaspoon of ground cumin
13 - 1/2 teaspoon salt

# Instructions:

01 - Whip up the avocado crema by blending all its ingredients until smooth. Get the carne ready by marinating it and toss together the fries.
02 - Cook the carne asada as needed. Grill the pineapple slices on both sides for 6-8 minutes until you see some char.
03 - Wrap up your tortillas in foil, pop them in the oven at 350°F for about 10 minutes, and make sure they're nice and flexible.
04 - In the middle of each tortilla, pile on carne, fries, cheese, pineapple, salsa, and crema. Roll 'em up burrito-style.
05 - In a lightly oiled pan over medium-high heat, toast all sides of the burritos till golden and crispy.

# Notes:

01 - Sour cream and guacamole can replace avocado crema if needed
02 - Stores in the freezer for as long as three months
03 - Reheat using a microwave or oven
