Basil Tomato Burrata (Print Version)

# Ingredients:

→ Bread Base

01 - 1-2 cloves of garlic, peeled
02 - 1 long Italian loaf or baguette, sliced into pieces about 1-2 cm thick
03 - 3 tablespoons of extra virgin olive oil, split

→ Tomato Mixture

04 - ½ cup fresh basil leaves, torn or coarsely chopped
05 - About 2-3 cups of cherry tomatoes, halved
06 - 1 tablespoon balsamic vinegar
07 - ¼ of a red onion, shaved into super-thin slices
08 - A sprinkle of kosher salt and freshly cracked black pepper, adjusted to your liking

→ For Serving

09 - Fresh burrata cheese
10 - Extra virgin olive oil
11 - A touch of flaky sea salt
12 - A drizzle of balsamic glaze
13 - Whole fresh basil leaves

# Instructions:

01 - Toast or grill the bread slices brushed with a little olive oil till crispy and golden. Rub one side of the bread with a garlic clove while the slices are warm.
02 - In a bowl, toss together sliced cherry tomatoes, onion, torn basil, 2 tablespoons of olive oil, and balsamic vinegar. Sprinkle some salt and pepper, giving it all a good stir. Adjust to taste.
03 - Cut open the burrata gently. Lay the prepared toast, garlic side up, on a platter and top each piece with some of the soft burrata.
04 - Spoon the tomato mixture on top of the burrata. Add a touch of olive oil, balsamic glaze, flaky salt, and some fresh basil leaves to finish.

# Notes:

01 - Try swapping in roasted garlic, red peppers, lemon zest, or some capers for extra variety.
02 - Classic ciabatta or baguette is great, but sourdough or gluten-free bread can be a fun experiment.
03 - No burrata handy? Go for ricotta, fresh buffalo mozzarella, or even cottage cheese for a simple alternative.
04 - The best olive oil you can find will really make the flavor pop, so don’t skimp here!
