Chocolate Peanut Bars (Print Version)

# Ingredients:

→ Chocolate Layer

01 - 2 tablespoons coconut oil (optional)
02 - 2 cups chocolate chips

→ Peanut Butter Layer

03 - 1 stick butter, softened
04 - 1 teaspoon vanilla extract
05 - 2 ½ cups powdered sugar (don’t pack it too tightly)
06 - 1 cup creamy peanut butter

# Instructions:

01 - Grab some parchment paper and cover the bottom of a 9x9 dish.
02 - Put the softened butter and creamy peanut butter in a stand mixer bowl. Mix on medium speed until smooth, scraping the sides as needed.
03 - On low speed, mix in the vanilla extract. Slowly sprinkle in the powdered sugar, and let it blend until a dough forms. If it's too sticky, add powdered sugar little by little.
04 - Scoop out the peanut butter dough and spread it evenly into the pan. Use clean fingers or the back of a spoon to press it firmly into place.
05 - In a microwaveable bowl, combine chocolate chips and coconut oil. Heat for 30 seconds, stir it up, then microwave another 20-30 seconds until melted and smooth.
06 - Pour the melted chocolate over the peanut butter layer. Use a spatula to spread it out so it’s nice and even.
07 - Put the dish in the fridge for about 2 hours so the chocolate sets and becomes solid.
08 - Add a sprinkle of sea salt on top before serving if you want.

# Notes:

01 - Keep the bars in a sealed container in the fridge for up to three days.
02 - Adding the coconut oil makes the chocolate texture smoother and gives it a nice shine.
03 - For the best results, weigh your powdered sugar or measure it properly to keep the bars from crumbling.
