Fritter Bites (Print Version)

# Ingredients:

01 - 1 teaspoon vanilla extract.
02 - 6 tablespoons melted unsalted butter.
03 - 1 large egg.
04 - 2 teaspoons baking powder.
05 - 1 cup fresh or frozen blueberries.
06 - 1-1/2 cups of all-purpose flour.
07 - 1/3 cup milk.
08 - 1/2 teaspoon salt.
09 - 2 teaspoons blueberry jam.
10 - 1/2 cup white sugar.
11 - 2 cups powdered sugar.
12 - 2 containers (5.3 oz each) of blueberry Greek yogurt.

# Instructions:

01 - Set your oven to 350°F and get a mini muffin pan ready by spraying it with cooking spray.
02 - Combine salt, baking powder, flour, and sugar in a big bowl and mix well.
03 - In a smaller bowl, whisk the egg, yogurt, vanilla, and melted butter until smooth. Stir this into the dry ingredients and gently fold in the blueberries.
04 - Fill each cup of the muffin pan almost up to the brim with the batter.
05 - Bake for about 15 minutes, or until the tops are lightly browned.
06 - Stir together the milk, blueberry jam, and powdered sugar until it’s creamy and smooth.
07 - Dip the top of each fritter into the glaze and set them down on parchment-lined sheets.
08 - Broil for 3-4 minutes, turning the pan occasionally, until the tops are crispy and golden. Apply leftover glaze with a brush.

01 - Keep refrigerated and warm up before enjoying.
02 - Watch closely while broiling so they don’t burn.
03 - Wait 15 minutes for the glaze to firm up before eating.
