Blueberry Banana Bread (Print Version)

# Ingredients:

→ Bread

01 - ¾ teaspoon of baking soda
02 - ¾ cup (150g) of white sugar
03 - 1½ cups (222g) blueberries, split
04 - 4 big ripe bananas, mashed (about 2 cups)
05 - 2 large eggs, at room temp
06 - 2 cups (250g) of plain flour
07 - 1 teaspoon of vanilla
08 - 3 tablespoons veggie oil
09 - ½ teaspoon of kosher salt
10 - 3 tablespoons melted unsalted butter
11 - ¼ cup (57.5g) sour cream, not cold

# Instructions:

01 - Line a 9x5-inch pan with parchment and spritz on cooking spray. Set your oven to 350°F.
02 - In a big bowl, stir flour, salt, sugar, and baking soda together.
03 - Smash bananas, then mix in butter, sour cream, oil, eggs, and vanilla in another bowl.
04 - Add the dry mix to the banana mixture. Gently fold in most of the blueberries (about 1 cup).
05 - Pour batter into the lined pan. Scatter on the rest of the blueberries and bake around 75-78 mins. A toothpick should come out a little crumbly, not wet.
06 - Leave to cool in the pan for 20 minutes, then lift it out to cool fully.

# Notes:

01 - Bringing ingredients to room temp works better.
02 - Parchment lining makes pulling it out easier.
