Set your oven to heat up to 180°C (350°F). For ovens without a fan, go for 200°C (390°F).

Drizzle some honey (1 tablespoon) over the surface of each piece of pastry.

Spread the blue cheese crumbles, Parmesan, and walnuts evenly on both pastry sheets. Sprinkle them with fresh thyme, some salt, and pepper.

Wrap the pastry up snugly, one sheet at a time. Slice each into two long halves. Tuck the ends to keep all the stuffing in place.

Using baking paper, give each strip a twist and roll them into a round coil gently.

Swipe the coils with a little milk for a golden look. Bake for 25–30 minutes at the set oven temp until they puff up and brown well.

Take them out of the oven, toss on some fresh thyme leaves, and enjoy them warm.
