Blackened Salmon Avocado Oil (Print Version)

# Ingredients:

→ Main

01 - 3 tablespoons avocado oil, split up
02 - 1 tablespoon of blackened spices, or however much you like
03 - 4 salmon fillets, about 170g each

→ To Serve

04 - Chopped parsley, if you'd like
05 - Lime wedges, optional

# Instructions:

01 - Dry off each fillet completely using a paper towel. Pour about 1 tablespoon of avocado oil over every fillet so it's evenly spread out.
02 - Sprinkle a good amount of the blackened spices evenly over the salmon. Let it chill on the counter for at least 10 minutes, so it soaks up the seasoning.
03 - Heat up a non-stick or cast iron pan with 2 tablespoons of avocado oil on medium-high. Lay the salmon fillets spice-side down in the pan. Cook for 2–3 minutes until they're nicely charred and don't stick to the pan anymore.
04 - Flip the salmon carefully and let it cook for another 2–3 minutes. The fat will melt, and the salmon will easily break into flakes with a fork.
05 - Move the salmon to plates and enjoy right away. Add lime wedges and parsley for extra flavor, if you'd like.

01 - Bringing the salmon up to room temperature before cooking helps it sear more evenly and stay tender.
