# Ingredients:

→ Base

01 - 1/4 cup melted unsalted butter
02 - 1 cup ground-up digestive biscuits

→ Pistachio layer

03 - 1/4 cup powdered sugar
04 - 1 cup finely ground pistachios
05 - 1/4 cup heavy whipping cream

→ Cream cheese layer

06 - 1/2 cup powdered sugar
07 - 1 cup softened cream cheese
08 - 1 teaspoon pure vanilla

→ Blackberry layer

09 - 1/2 cup white sugar
10 - 1 tablespoon fresh lemon juice
11 - 2 teaspoons cornstarch
12 - 2 cups ripe blackberries

→ Topping

13 - Fresh blackberries for decoration
14 - 1/4 cup roughly chopped pistachios

# Instructions:

01 - Stir the crushed biscuits with the melted butter, then press the mix firmly into a lined 8×8 pan. Let it cool in the fridge for 20 minutes.
02 - Whip together the finely ground pistachios, heavy cream, and powdered sugar till smooth. Spread this on the chilled biscuit layer then pop it back in the fridge for 20 minutes.
03 - Blend cream cheese, powdered sugar, and vanilla until smooth and airy. Spread this layer over the pistachio mixture and chill again.
04 - Simmer blackberries with sugar, lemon juice, and cornstarch on medium heat until it thickens. Let it cool down a bit before layering it over the cream cheese and chill until firm.
05 - Right before you serve, sprinkle with chopped pistachios and pile some fresh blackberries for flair.

# Notes:

01 - Swap heavy cream for milk or light cream to lighten it up.
02 - Press down the base firmly and make sure it chills long enough to hold the layers.
03 - Don’t spread the hot blackberry mix too soon or it’ll mess with the cream cheese layer.
04 - You can refrigerate leftovers for 5 days or freeze them to last longer.
