Black Bean Egg Bake (Print Version)

# Ingredients:

01 - 8 tortillas, to serve.
02 - 1 tablespoon chopped fresh cilantro.
03 - ¼ cup crumbled cotija cheese.
04 - 4 large eggs.
05 - 1 can (15 oz) black beans, rinsed and drained.
06 - 1 can (4 oz) diced green chiles.
07 - 1 can (14.5 oz) diced petite tomatoes.
08 - ½ teaspoon kosher salt.
09 - ½ teaspoon ground cumin.
10 - 1 tablespoon chili powder.
11 - 2 tablespoons tomato paste.
12 - 1 medium-size yellow onion, diced.
13 - 3 garlic cloves, minced.
14 - 3 tablespoons olive oil.

# Instructions:

01 - Warm the oven to 375°F.
02 - Pour in the oil and sauté the onion and garlic for about 7-9 minutes until nicely browned.
03 - Add in the tomato paste, spices, tomatoes, chiles, and black beans. Stir and let it bubble.
04 - Create little divots in the sauce and gently put the eggs into them.
05 - Place the skillet in the oven uncovered and cook for 15-20 mins until the egg whites are solid, with runny yolks.
06 - Top with cilantro and cheese and serve warm with tortillas on the side.

01 - Make sure to cook the eggs the way you like.
02 - The bean mixture can be prepped in advance.
03 - It’s best enjoyed right after baking.
