Crack the eggs into a medium bowl and whisk with 2 tbsp soy sauce. Toss in the chicken cubes and cornstarch and stir it all until the chicken is covered. Put it aside for now.

Mix water, lime juice, sesame oil, ketchup, honey, salt, and the last tablespoon of soy sauce in a small pot. Let it come to a boil, then drop the heat to low and let it gently simmer for around 10 minutes until it gets a bit thicker.

Pour some vegetable oil into a hot wok or big frying pan on medium-high heat. Cook the chicken cubes until they’re golden and cooked through. Set the chicken aside on a plate.

Put the fried chicken in a clean bowl. Pour the sauce over the pieces and stir everything together until it’s all coated well.

Spoon the glazed chicken on top of the rice. Sprinkle with sesame seeds and some sliced green onions before serving.
