Switch on your waffle maker and give it a spray of non-stick oil. Set aside for now.

Grab a big bowl and whisk together cinnamon, flour, sugar, salt, and baking powder.

Use a hand mixer on the egg whites in a medium-sized bowl. Whisk until they're thick and form peaks. Set aside.

In another medium bowl, stir the egg yolks, vanilla, milk, and oil until blended.

Pour the wet mixture into the dry mix and stir it all up until it's smooth.

Carefully fold the whipped egg whites into the mix. Don't go crazy—some lumps are fine!

Pour a ladle of batter onto the heated waffle maker. Cook them following the instructions for your machine.
