Crispy Beef Tacos (Print Version)

# Ingredients:

01 - 10 small corn tortillas
02 - 1 lb ground beef (lean, 90%)
03 - 1 tbsp olive oil
04 - 1 packet seasoning for tacos
05 - ¾ cup enchilada sauce or red chili sauce
06 - 2 ½ cups shredded Oaxaca, Monterey Jack, or Mexican cheese mix

07 - Pickled onions
08 - Hot sauce of your choice
09 - Salsa or pico de gallo
10 - Guacamole or mashed avocado
11 - Sour cream or crema
12 - Lime slices for squeezing

# Instructions:

01 - Set your oven to 450°F (230°C) and let it warm up completely.
02 - Brown the ground beef in a large pan on medium-high heat. Add the taco spices and enchilada sauce, stir, and let it simmer briefly. Turn off the heat.
03 - Wrap the stack of tortillas in damp paper towels and microwave them for about 30-60 seconds. This makes them bend easier.
04 - Take a tortilla and lightly coat one side with olive oil. Place it oil-side down, then layer 2 tablespoons cheese, ¼ cup meat, and 2 more tablespoons cheese on half. Fold it in half like a taco shell.
05 - Lay the tacos flat on a baking sheet, making sure each one stays in place. Bake for 16 minutes until they’re golden and crispy.
06 - Wait a few minutes before serving to let the cheese set. Add your favorite toppings and enjoy.

# Notes:

01 - Warm tortillas enough so they won’t crack when folded.
02 - Nonstick or ceramic baking sheets are better for keeping food from sticking.
03 - Feel free to hold tacos shut with toothpicks while baking, if needed.
