Brown the ground beef in a large pan on medium-high heat. Add the taco spices and enchilada sauce, stir, and let it simmer briefly. Turn off the heat.

Wrap the stack of tortillas in damp paper towels and microwave them for about 30-60 seconds. This makes them bend easier.

Take a tortilla and lightly coat one side with olive oil. Place it oil-side down, then layer 2 tablespoons cheese, ¼ cup meat, and 2 more tablespoons cheese on half. Fold it in half like a taco shell.

Lay the tacos flat on a baking sheet, making sure each one stays in place. Bake for 16 minutes until they’re golden and crispy.
