Beef Rice Skillet (Print Version)

# Ingredients:

01 - 1 cup shredded cheddar cheese (optional).
02 - Salt and pepper, to taste.
03 - 1 teaspoon dried oregano.
04 - 1 teaspoon paprika.
05 - 1 tablespoon olive oil.
06 - 14.5 oz can of diced tomatoes.
07 - 2 cups of beef broth.
08 - 2 minced garlic cloves.
09 - 1 diced bell pepper.
10 - 1 medium onion, chopped.
11 - 1 cup white long-grain rice.
12 - 1 pound of lean ground beef.

# Instructions:

01 - Warm up some oil in a big skillet. Toss in the ground beef, season lightly with salt and pepper, then cook until no longer pink.
02 - Throw in the garlic, onion, and bell pepper. Stir them around for 3-4 minutes until they turn soft.
03 - Add oregano and paprika. Stir it all together so the flavors mix well.
04 - Pour your rice into the skillet. Mix it around with the beef and seasoning to coat evenly.
05 - Add the diced tomatoes and beef broth. Turn the heat up to boil, then lower it right away.
06 - Put a lid on and let it gently cook for 18-20 minutes. Make sure the rice isn’t hard anymore.
07 - Once done, give the rice a fluff, check if it needs more seasoning, and sprinkle cheese on top if you’d like.
