Beef Potato Roll (Print Version)

# Ingredients:

01 - 2 big tomatoes, chopped up.
02 - 1 onion, diced really fine.
03 - 4 medium potatoes, shredded.
04 - 2 eggs, large ones.
05 - 1 teaspoon paprika powder.
06 - 1½ tablespoons parsley, freshly chopped.
07 - A pinch of salt and pepper.
08 - 1 garlic clove, finely minced.
09 - ½ pound of ground beef.
10 - ¼ cup plain tomato sauce.
11 - ¼ teaspoon red chili flakes.
12 - 2½ cups mozzarella, grated.
13 - 1 tablespoon tomato paste.
14 - Half a cup of water.
15 - Yogurt, just plain, to serve.

# Instructions:

01 - Stir together your grated potatoes, eggs, parsley, 1 cup cheese, and some salt and pepper. Lay it out on parchment, pressing 1 cup cheese underneath.
02 - Pop it into the oven at 350°F, and let it cook until the edges turn a nice golden color—about 25 to 30 minutes.
03 - Sauté the onion and garlic until they soften. Add beef and cook until browned. Stir in tomatoes, sauce, spices, and a little water. Let it bubble on low for 15 minutes.
04 - Spread the cooked meat across the potato layer, sprinkle on the last of the cheese, and carefully roll it all up like a log.
05 - Bake another 15 minutes, just to make it nice and hot. Cool for 5-10 minutes before slicing it up.

# Notes:

01 - Press potatoes down firmly to keep them together.
02 - Let it cool a bit to make rolling easier.
03 - Give it time to rest for clean slices.
