Beef Barbacoa Wrap (Print Version)

# Ingredients:

→ Rice

01 - A single lime, juiced
02 - A quarter cup of cilantro, finely chopped
03 - One cup of jasmine rice

→ Burrito Base

04 - Four large tortillas, burrito-style
05 - 16 oz of shredded beef barbacoa
06 - One cup of drained and rinsed black beans

→ Toppings

07 - Half a cup of fresh pico de gallo
08 - A quarter cup of creamy guacamole
09 - One cup of crisp shredded romaine lettuce
10 - A quarter cup of sour cream
11 - A cup of shredded cheese of your choice

# Instructions:

01 - Make the rice by following the directions on its package. Add the lime juice and cilantro once it's cooked.
02 - On medium heat, warm up the barbacoa in a skillet. Let it sit for 3-5 minutes without turning, then toss and cook another 2-3 minutes until fully hot.
03 - Microwave tortillas under a damp towel for 30-60 seconds or heat them in a skillet for about 30 seconds per side until soft.
04 - On each tortilla, spread the rice, add the black beans, barbacoa, sour cream, guacamole, pico de gallo, shredded cheese, and lettuce.
05 - Tuck the edges of the tortilla over the fillings and roll it tightly. Keep the seam side facing down, cut it in half, or wrap it in foil before serving.
