BBQ Tofu Sandwich (Print Version)

# Ingredients:

01 - 2 tablespoons of coconut or olive oil.
02 - 1 block of extra-firm tofu, drained.
03 - 1/4 teaspoon ground black pepper.
04 - 1/4 teaspoon fine salt.
05 - 1 teaspoon sriracha or chili paste.
06 - 1/4 cup tangy BBQ sauce.
07 - Two soft sandwich buns, toasted.
08 - 1 ripe avocado (optional).
09 - 3-4 tablespoons plant-based mayonnaise.
10 - 1/4 cup red onions, sliced thin.
11 - 1/4 teaspoon fine salt.
12 - 4 ounces shredded cabbage, about 3 packed cups.
13 - 1/4 cup fresh cilantro, finely chopped.
14 - 1 tablespoon apple cider vinegar.

# Instructions:

01 - Pat your tofu dry, cut it into thick, bun-sized slabs, and set it aside for grilling.
02 - In a pan on medium-high heat, pour in your oil and season lightly with salt and pepper.
03 - Lay the tofu down in the hot oil carefully. Let it cook undisturbed until it gets a nice golden crust.
04 - Mix the barbecue sauce with chili paste in a small bowl while the tofu cooks.
05 - In a mixing bowl, combine the cabbage, cilantro, vinegar, mayonnaise, salt, and sliced red onions.
06 - While waiting for the tofu to brown (which takes about 12 minutes), toast the buns to a light golden color.
07 - Lower the heat, coat the crispy tofu with the BBQ sauce mix, and let it caramelize just a little.
08 - Spread extra mayo on the toasted buns if you'd like, and layer the hot BBQ tofu slices on top.
09 - Generously add the fresh, creamy slaw on top of the tofu for a great flavor balance.
10 - Add avocado slices if you're using them. Serve right away while the tofu is still crispy.
