Pineapple Chicken Skewers (Print Version)

# Ingredients:

→ Sauces and Seasonings

01 - 2/3 cup teriyaki sauce
02 - 2/3 cup barbecue sauce
03 - 1 tablespoon grated fresh ginger
04 - 3 minced garlic cloves
05 - Freshly ground black pepper for taste
06 - Salt (kosher) to taste

→ Main Ingredients

07 - 1 sweet onion, chopped into 1 1/2-inch chunks
08 - 1 red bell pepper, cut into 1 1/2-inch pieces
09 - 2 cups of pineapple chunks (fresh)
10 - 2 lbs chicken breasts without skin or bones, diced into 1-inch pieces

→ Cooking Oils

11 - 2 tbsp canola oil

# Instructions:

01 - Stir barbecue sauce, teriyaki sauce, garlic, and ginger together in a medium-sized bowl. Save 1/2 cup of it for later use.
02 - Pour the rest of the sauce over the chicken in a large bag or bowl. Let it sit in the fridge for at least 2 hours and up to 8 hours. Flip it occasionally. When ready, drain and set chicken aside.
03 - Grab skewers and add chunks of chicken, pineapple, bell pepper, and onion. Brush them with canola oil, then sprinkle with salt and pepper.
04 - Bring your grill to a medium temperature.
05 - Place the skewers on the grill and cook for about 10 minutes, flipping every so often. The chicken should be 165°F inside. Add the saved sauce and grill for 1–2 more minutes.
06 - Immediately enjoy the skewers while they're still warm.
