# Ingredients:

01 - 1 cup mixed veggies (carrots, peppers, broccoli)
02 - 1 lb chicken breast, skinless and boneless
03 - 1 cup rice, cooked (brown, white, or cauliflower)
04 - A pinch of salt and pepper
05 - 2 tbsp olive oil

06 - 2 tbsp sriracha
07 - 1/2 cup mayo
08 - 1 tbsp honey
09 - 1 tsp lime juice
10 - A sprinkle of garlic powder (1 tsp)

# Instructions:

01 - Follow the cooking instructions on the rice packaging. Fluff it up and set it aside. A rice cooker can help make things easier and give good results every time.
02 - Slice the chicken into small pieces and give it a sprinkle of salt and pepper. These simple steps boost the flavor and help it cook evenly.
03 - Warm up the olive oil in a big pan over medium-high heat. Toss in the chicken chunks and cook them for about 6 to 8 minutes. Stir occasionally until golden and fully cooked (165°F inside).
04 - In a small bowl, combine the mayo, honey, sriracha, lime juice, and garlic powder. Adjust the taste for sweetness or spice, however you like.
05 - When the chicken is done, add the veggies to the same pan. Stir them around for 2 or 3 minutes, cooking just enough to keep them a bit crunchy.
06 - Take the pan off the heat. Stir the sauce into the chicken and veggies until they’re well coated. Plate it over the rice, and feel free to add more sriracha or green onions before digging in.
