Banana Zucchini Oat Loaf (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 1 cup sugar, granulated
02 - 1 cup oats
03 - 2 teaspoons cinnamon, ground
04 - 1 teaspoon powder for baking
05 - 1 teaspoon soda for baking
06 - ½ teaspoon salt
07 - 1½ cups plain flour

→ Wet Ingredients

08 - 3 cups zucchini, grated
09 - 2 bananas, smashed (ripe)
10 - 2 teaspoons vanilla
11 - 1 cup oil, canola
12 - 2 eggs, large

# Instructions:

01 - Turn your oven to 350°F and get three small loaf pans ready.
02 - In a big bowl, toss together the flour, oats, baking soda, baking powder, salt, and cinnamon.
03 - In a separate smaller bowl, stir up the sugar, eggs, oil, vanilla, and mashed bananas.
04 - Pour the wet mix into the dry one and stir it up by hand. Add in the grated zucchini at the end and mix until it’s evenly blended.
05 - Let it bake for 35-45 minutes. It’s done when the bread moves away from the pan edges, and a toothpick poked in comes out clean.
