Banana Pancakes 2 Ingredients (Print Version)

# Ingredients:

01 - 1/2 cup granola (optional)
02 - 1 cup fresh fruit like blueberries, raspberries, or chopped apples (optional)
03 - 2 large eggs, whisked lightly
04 - 1/4 teaspoon vanilla extract (optional)
05 - 1 tablespoon honey (optional)
06 - 1 ripe banana
07 - 1/8 teaspoon salt (optional)
08 - 1 tablespoon unsweetened cocoa powder (optional)
09 - 1/8 teaspoon baking powder (optional, helps make pancakes fluffier)
10 - Butter or oil for cooking, if needed
11 - 1/2 cup mixed toppings like nuts, chocolate chips, or anything else you like (optional)
12 - Maple syrup, powdered sugar, jam, or other toppings of your choice, for serving

# Instructions:

01 - Take the beaten eggs and stir them into the mashed banana. Keep mixing until the two blend together completely. The batter will be thinner than usual pancake batter.
02 - Slide a flexible spatula underneath the pancake and carefully flip it onto its other side. Let it cook for another minute or until golden on the bottom.
03 - Grab the banana, peel it, and split it into smaller pieces in a bowl. Squash it with a fork until it's smooth and creamy, without big lumps.
04 - Put a griddle or skillet on the stove, heat it up to medium, and add a little butter or oil if you'd like to prevent sticking.
05 - If you're adding things like nuts or chocolate chips, sprinkle them onto the pancakes while they're still wet on top and the first side is cooking.
06 - Toss in extras like vanilla, cocoa powder, salt, or baking powder if you want to switch up the taste. Heavier toppings like nuts or fruit should wait until later.
07 - Scoop about two tablespoons of the batter onto the skillet for each pancake. Leave some space between them. Cook until the edges set and the bottom is golden—about 60 seconds.
08 - Move the cooked pancakes onto a warm plate. Keep going until all the batter's used up. Serve them warm with whatever toppings you like!

# Notes:

01 - Use small scoops of batter—just a couple of tablespoons per pancake—to flip them easily.
02 - These pancakes are a bit fragile. Flip them gently and slowly to keep them from breaking apart.
