Banana Bread Gluten-Free (Print Version)

01 - 1½ cups gluten-free all-purpose flour
02 - ¾ teaspoon baking soda
03 - ¾ teaspoon baking powder
04 - ½ teaspoon salt
05 - 3-4 medium ripe bananas, mashed (about 1½ cups)
06 - ⅓ cup unsalted butter, melted and cooled
07 - ¾ cup sugar (white or granulated)
08 - 1 beaten large egg
09 - 1 teaspoon pure vanilla extract

# Instructions:

01 - Set your oven to 350°F and coat an 8x4 loaf pan evenly with cooking spray.
02 - Mash the bananas in a big bowl. Stir in melted butter, sugar, egg, and vanilla until smooth.
03 - In a smaller bowl, mix together gluten-free flour, baking powder, baking soda, and salt.
04 - Gradually mix the dry stuff into the banana mixture. Stir until you don’t see dry spots, but lumps of banana are fine.
05 - Pour the batter into the loaf pan. Bake for 50-60 minutes, and check with a toothpick—if it comes out clean, it’s done.
06 - Let the loaf rest in the pan for 15 minutes, then pop it out onto a cooling rack. Wait until it’s fully cooled before slicing.

01 - Go for bananas with lots of brown spots—they're the tastiest!
02 - Don’t over-mash; little banana chunks add a nice texture.
