Set your oven to 350°F and coat an 8x4 loaf pan evenly with cooking spray.

Mash the bananas in a big bowl. Stir in melted butter, sugar, egg, and vanilla until smooth.

In a smaller bowl, mix together gluten-free flour, baking powder, baking soda, and salt.

Gradually mix the dry stuff into the banana mixture. Stir until you don’t see dry spots, but lumps of banana are fine.

Pour the batter into the loaf pan. Bake for 50-60 minutes, and check with a toothpick—if it comes out clean, it’s done.

Let the loaf rest in the pan for 15 minutes, then pop it out onto a cooling rack. Wait until it’s fully cooled before slicing.
