Mash the banana in a medium bowl until it’s lump-free and smooth.

Whisk the eggs into the mashed banana. Stir until the mixture is very runny.

Put a non-stick pan on medium heat. Toss in a little butter or oil, and wait for it to heat up until a sprinkle of water sizzles.

Use about 2 tablespoons of batter for each pancake. Let them cook for around 1 minute until the bottom turns golden.

Flip the pancakes gently, and leave them for another 1-2 minutes until both sides are golden brown.
