Banana Egg Pancakes (Print Version)

# Ingredients:

01 - 2 large eggs
02 - 1 medium, ripe banana

→ For Cooking

03 - Oil or butter for frying

# Instructions:

01 - Mash the banana in a medium bowl until it’s lump-free and smooth.
02 - Whisk the eggs into the mashed banana. Stir until the mixture is very runny.
03 - Put a non-stick pan on medium heat. Toss in a little butter or oil, and wait for it to heat up until a sprinkle of water sizzles.
04 - Use about 2 tablespoons of batter for each pancake. Let them cook for around 1 minute until the bottom turns golden.
05 - Flip the pancakes gently, and leave them for another 1-2 minutes until both sides are golden brown.

# Notes:

01 - If you want a silky batter, blend everything in a food processor.
02 - Store leftovers in the fridge or freeze layered with parchment paper.
03 - Reheat in the toaster to bring back crispy edges.
