Heat up your skillet over medium, throw in a bit of butter, and let it melt until it's glossy and smooth.

Break the eggs gently into the skillet, sprinkle with salt and pepper, and cook until the whites are firm but the yolks are still runny and bright. Carefully move them aside.

Lay one tortilla in the pan and sprinkle half of your cheese all over it, making a cheesy foundation for the fillings.

Place the cooked eggs on top of the cheese layer, then space out slices of avocado across the eggs. Finish it off with the rest of the cheese.

Pop the second tortilla on top and cook for a couple of minutes. Flip it like a pro, and cook the other side until everything’s golden with beautifully melted cheese.

Move it over to a cutting board, slice it into pieces, and dig in while it's warm and gooey.
