Set your oven to 325°F (165°C) and let it heat up.

In a mixing bowl, combine the drained spinach with half the Cheddar cheese, about 5 tablespoons of breadcrumbs, and your beaten egg. Evenly spread this mix at the bottom of a small baking dish.

Lay your cod fillets right on top of the spinach mixture. Sprinkle over some salt and pepper to bring out the flavor.

Scatter the rest of the Cheddar cheese and breadcrumbs on top. Cover it up and bake for about 20 minutes, or until the fish breaks apart easily with a fork.
