In a bowl, stir together lime juice, sesame oil, soy sauce, vinegar, sugar, and grated ginger until well mixed.

Coat steak with pepper and cook it covered over medium heat on the grill. Flip when halfway done and grill for about 6-8 minutes per side until it's the doneness you like (medium-rare is 135°F, medium is 140°F). Let it cool for 5 minutes before you cut it up.

Follow the instructions on the packet to cook rice noodles. Strain, rinse them in cold water, then strain again.

Toss cooked noodles, carrots, celery, zucchini, and sliced steak in a big bowl. Pour the dressing over everything and mix.
