Noodle Beef Salad (Print Version)

# Ingredients:

→ Dressing

01 - 2 tablespoons rice vinegar
02 - 1/4 cup lime juice
03 - 1 tablespoon sesame oil
04 - 2 tablespoons sugar
05 - 1/4 cup reduced-sodium soy sauce
06 - 1 tablespoon freshly grated ginger

→ Main Ingredients

07 - 1/4 teaspoon pepper
08 - 1 cup zucchini, sliced thin
09 - 6 ounces thin rice noodles
10 - 1 steak, top sirloin (1 lb)
11 - 2 medium carrots, sliced into thin strips
12 - 1 rib of celery, thinly cut

# Instructions:

01 - In a bowl, stir together lime juice, sesame oil, soy sauce, vinegar, sugar, and grated ginger until well mixed.
02 - Coat steak with pepper and cook it covered over medium heat on the grill. Flip when halfway done and grill for about 6-8 minutes per side until it's the doneness you like (medium-rare is 135°F, medium is 140°F). Let it cool for 5 minutes before you cut it up.
03 - Follow the instructions on the packet to cook rice noodles. Strain, rinse them in cold water, then strain again.
04 - Toss cooked noodles, carrots, celery, zucchini, and sliced steak in a big bowl. Pour the dressing over everything and mix.
