Apple Fritter Bites (Print Version)

# Ingredients:

01 - 2 teaspoons baking powder.
02 - 1/2 teaspoon kosher salt.
03 - 1/4 cup unsalted butter, melted.
04 - 1/2 teaspoon vanilla extract.
05 - 1/4 cup granulated sugar.
06 - 1 large egg.
07 - 1/2 cup applesauce with no sugar added.
08 - 2 teaspoons cinnamon, ground.
09 - 1 and a half cups all-purpose flour.
10 - 1 and a half cups apples, finely chopped.
11 - 2 cups icing sugar.
12 - 1/3 cup plus 2 tablespoons apple juice.

# Instructions:

01 - Turn the oven to 200°C and grease your baking tray.
02 - Whip together the flour, cinnamon, baking powder, and salt until blended.
03 - Stir the butter and sugar together, then toss in the egg, applesauce, and vanilla.
04 - Carefully stir in dry ingredients into the wet ones until combined.
05 - Gently fold in the apple chunks.
06 - Drop spoonfuls of the batter onto the tray.
07 - Bake for 10 minutes, then switch to the broiler setting.
08 - Whisk the apple juice and icing sugar together until smooth.
09 - Brush fritters with icing and put back under the broiler for 2-4 minutes for a caramelized finish.
10 - Spread over the last of the icing and let it sit for 15 minutes to harden.
