Zucchini Chips Air Fryer (Print Version)

# Ingredients:

01 - 2 zucchinis, medium-sized (about 1 lb).
02 - 1/2 tsp salt, plus some extra for sprinkling.
03 - 1/4 tsp ground black pepper.
04 - 3 tbsp Parmesan cheese, finely grated.
05 - 1 tbsp olive oil.
06 - 1/3 cup breadcrumbs, finely ground.
07 - 2 tsp cornstarch.
08 - 1 tsp garlic powder.
09 - Cooking spray.
10 - A pinch of cayenne (optional).

# Instructions:

01 - Cut zucchini into thin slices. Sprinkle with a little salt and wait 5 minutes.
02 - In a bowl, stir together breadcrumbs, Parmesan, cornstarch, garlic powder, pepper, cayenne, and the rest of the salt.
03 - Use a towel to pat the zucchini dry, then toss them in olive oil.
04 - Coat the zucchini slices thoroughly in the breadcrumb mixture by pressing each slice.
05 - Spray the fryer basket, lay zucchini in one layer, and cook at 325°F. After 10 minutes, flip them over and cook another 8-12 minutes until crisp.
06 - If you like, sprinkle more cheese on top. Serve warm or let them cool on a rack.

# Notes:

01 - You might need to cook multiple batches if your fryer is small.
02 - Keep leftovers in the fridge for no more than 3 days.
