In a bowl, stir together breadcrumbs, Parmesan, cornstarch, garlic powder, pepper, cayenne, and the rest of the salt.

Use a towel to pat the zucchini dry, then toss them in olive oil.

Coat the zucchini slices thoroughly in the breadcrumb mixture by pressing each slice.

Spray the fryer basket, lay zucchini in one layer, and cook at 325°F. After 10 minutes, flip them over and cook another 8-12 minutes until crisp.
