Air Fryer Southwest Chicken (Print Version)

# Ingredients:

→ Filling

01 - 15.25 ounces sweet corn, drained
02 - 1 cup fresh pico de gallo
03 - 14.5 ounces diced tomatoes, drained
04 - 1½ cups sharp cheddar cheese, shredded
05 - 1 cup black beans, drained and rinsed
06 - 8 ounces cream cheese, softened
07 - 2 tablespoons taco seasoning
08 - 2 cups shredded rotisserie chicken

→ Tortillas

09 - Cooking spray
10 - 6 burrito-sized flour tortillas

→ Garnish (optional)

11 - Pico de gallo
12 - Sour cream

# Instructions:

01 - Turn your air fryer on and set it to 400°F.
02 - Grab a big bowl, toss in the shredded chicken, cream cheese, cheddar cheese, beans, corn, tomatoes, taco seasoning, and the pico de gallo. Give it all a good stir until it's fully mixed.
03 - Spoon about 1 cup of the mix onto the middle of a tortilla. Fold the sides inwards, then roll it up tightly from the bottom to seal it. Spray the outside with cooking spray.
04 - Place the burritos in your air fryer and cook for 5 minutes. Flip them, give the other side a spray, and cook another 5 minutes.
05 - Take the burritos out of the air fryer and dig in! Add some sour cream or more pico de gallo if you'd like.
06 - Set your oven to 400°F and lay parchment paper on a baking tray. Wrap the burritos as usual, then line them up on the tray. Bake for 10 to 15 minutes, until they're crispy and hot. Adjust timing if necessary.

01 - Roll those tortillas tight, or they might come undone while cooking.
02 - Cooking time could change based on your specific air fryer or oven.
