Beat the egg in a small bowl. Combine breadcrumbs, seasoning, and salt in another. Cover your baking tray with wax paper.

Roll each mozzarella stick in egg, then breadcrumbs, making sure it’s fully covered. Lay them on the prepared sheet and freeze for about an hour or less.

Do the egg and breadcrumb step again, re-coating the chilled sticks. Pop them back in the freezer for another hour.

Set your air fryer to 390°F. Lightly spray both the fryer basket and the sticks. Cook for 6 to 8 minutes, until you see a crispy golden finish.

Let them cool just a little and dig in while the cheese is still soft and stretchy.
