Slice the potatoes into sticks about 1/4–1/2 inch thick and leave them in ice-cold water for at least an hour, up to a whole day.

Warm your air fryer to 390°F. It usually takes around 15 minutes.

Pat the potatoes completely dry, then toss them evenly with salt, rosemary, black pepper, and oil.

Fry the potatoes for around 10 minutes, stopping halfway to shake them around.

Cook for another 10-12 minutes until they're golden and crunchy. Pull out any pieces that are too dark as you go.

Cool them for a few minutes, and sprinkle on more seasoning if you'd like.
