Fish Sticks Air Fryer (Print Version)

# Ingredients:

01 - Nonstick spray for greasing your basket.
02 - 1 pound of cod, chopped into pieces about 3 inches long.
03 - Half a cup of cornstarch.
04 - 1/2 tsp salt, plus more for sprinkling later.
05 - 1/2 tsp black pepper, freshly ground.
06 - Two large eggs.
07 - About one cup of panko crumbs.
08 - One teaspoon of paprika.
09 - Half a cup of mayonnaise.
10 - 1 tablespoon of lemon juice, freshly squeezed.
11 - 1/4 cup of chopped-up pickles.
12 - Two tablespoons of capers.
13 - Pinch of salt, around 1/8 teaspoon.
14 - Fresh parsley or dill to sprinkle on top if you want.

# Instructions:

01 - Spritz some cooking spray onto the air fryer basket to prevent sticking.
02 - In one bowl, stir together cornstarch, pepper, and salt. Put eggs in a second one and beat them. Mix panko and paprika in a third container.
03 - First, coat the cod in the cornstarch blend. Dunk it in the eggs, then cover it fully in panko crumbs.
04 - Lay the breaded cod in the fryer. A light spray of oil will help it crisp up. Cook for 6 minutes at 375°F, flip the pieces, and cook another 4-6 minutes until they're golden brown.
05 - Combine mayo, lemon juice, capers, pickles, and a pinch of salt in a mixing bowl.
06 - Add a bit of fresh parsley or dill to the fish for flavor, if you'd like. Serve hot with tartar sauce and lemon slices on the side.

# Notes:

01 - Keep the first batch of fish fingers warm in a 250°F oven while frying the next round.
02 - Store leftovers in the fridge for a few days. Heat them up again in the fryer at 350°F for about 3 minutes.
