Crispy Falafel Bites (Print Version)

# Ingredients:

01 - Hot water, as needed.
02 - 1/2 cup Greek yogurt.
03 - Lettuce leaves.
04 - 1 teaspoon paprika.
05 - 2 garlic cloves, peeled.
06 - 3 tablespoons all-purpose flour.
07 - Juice of 1 lemon.
08 - 1 tomato, sliced.
09 - 1 large shallot, roughly chopped.
10 - 6 pita breads.
11 - 2 teaspoons ground cumin.
12 - 1/2 cup mixed fresh herbs (parsley and cilantro).
13 - Cooking spray.
14 - 2 tablespoons sesame seeds.
15 - 2 cans chickpeas, drained.
16 - 1 cucumber, sliced.
17 - 1/2 red onion, thinly sliced.
18 - 1 teaspoon salt.
19 - 4 tablespoons olive oil.
20 - 1 cup tahini.

# Instructions:

01 - In a bowl, stir together tahini, yogurt, lemon juice, and olive oil. Add small amounts of hot water until it’s smooth and spreadable.
02 - Combine chickpeas, fresh herbs, garlic, shallot, flour, sesame seeds, cumin, paprika, and salt. Pulse in a food processor until it’s a rough blend.
03 - Roll into 1-inch discs. You’ll end up with roughly 25 to 30 pieces.
04 - Coat the air fryer with cooking spray. Lay discs inside without stacking. Cook at 350°F for 8 minutes, flip, then cook for 6 more.
05 - Warm your pita bread in the microwave for 15 seconds to soften. Pack it with falafel, the creamy sauce, and the fresh veggies.

# Notes:

01 - For deep frying, roll the mixture into balls. Fry at 350°F for about 4 minutes until golden and crispy.
02 - For pan frying, heat a layer of oil in a cast iron pan. Fry falafel discs on medium-high, about 3 to 4 minutes per side.
