Egg Rolls Air Fryer (Print Version)

# Ingredients:

01 - 1 pound ground chicken or pork.
02 - 1 tablespoon soy sauce.
03 - 3 cups shredded green cabbage.
04 - 1 medium carrot, grated.
05 - 3 scallions, sliced.
06 - 1 clove garlic, finely chopped.
07 - 1 tablespoon fresh ginger, minced.
08 - 1 tablespoon rice wine vinegar.
09 - 1 tablespoon olive oil.
10 - 12 wrappers for egg rolls.
11 - Oil for brushing or spraying.
12 - Optional: plum sauce for dipping.
13 - Optional: soy sauce for dipping.
14 - Optional: duck sauce for dipping.

# Instructions:

01 - Warm up the olive oil over medium heat in a big skillet. Add the ground meat and cook until it's no longer pink, roughly 6-8 minutes. Toss in garlic, ginger, carrots, scallions, and cabbage. Let it all sauté for 3-4 minutes till the cabbage softens. Stir in soy sauce and vinegar for seasoning, then take off the heat and cool.
02 - Place one wrapper in a diamond shape on a dry countertop. Spoon about 1/4 cup of the filling into the middle. Wet the edges with a bit of water. Fold the sides inward and roll it up tightly. Do this until all the wrappers are filled.
03 - Add the egg rolls to your air fryer basket, being careful not to overcrowd them. Lightly spray or brush the tops with oil.
04 - Set your air fryer to 350°F and cook the rolls for 6-7 minutes. Flip them over, brush on some oil again, and fry for 4-5 more minutes until crispy and golden.
05 - Enjoy right away with your favorite dipping sauces.

01 - These egg rolls made in an air fryer are a lighter version of the classic deep-fried kind. You get that crisp crunch outside and the savory meat-and-veggie mix inside.
02 - No air fryer? No problem! Shallow fry these in about half an inch of oil heated to 350°F. Cook each side 3-4 minutes till they're golden.
