Avocado Fries Air Fryer (Print Version)

# Ingredients:

01 - 2 big eggs.
02 - 3 avocados that are slightly firm and just under-ripe.
03 - 1/2 cup finely shredded Parmesan cheese.
04 - 1/2 cup ranch dressing.
05 - 1 cup crispy panko crumbs.
06 - Cooking spray.
07 - A pinch of coarse salt (if you'd like).
08 - Juice from a fresh lime (optional).
09 - 1/2 teaspoon ground black pepper.
10 - 2 tablespoons of spicy sriracha sauce.

# Instructions:

01 - Cut each avocado in half, take out the pit, and scoop the fruit out. Cut each half into 5 long strips.
02 - Mix together panko crumbs, grated Parmesan, and pepper in one bowl. In another, whisk up the eggs.
03 - First, dip a slice of avocado into the whisked eggs. Then cover it completely with the cheesy breadcrumb mix.
04 - Spritz your air fryer basket lightly with the cooking spray. Lay the coated avocado pieces in a single layer. Set to 350°F and air fry them for 3 minutes. Flip and let them fry for another 3 minutes till they're golden.
05 - In a tiny bowl, stir together the ranch and sriracha sauce until they're combined.
06 - Let the fries rest briefly and, if you like, sprinkle salt or squeeze lime juice on top. Serve them hot with the spicy ranch sauce on the side.

01 - These crispy avocado fries made in an air fryer are a fun and creamy change from regular fries. They're best served right after cooking.
02 - No air fryer? No worries! Pop these in the oven at 350°F for about 10–12 minutes until they turn golden.
